Sophie Nichols is an Honours student at the University of Newcastle studying anthropology. Sophie is currently working on a thesis titled ‘Land Use Conflicts: Retirement in Mining Affected Communities in the Hunter Valley’. Sophie along with her mother managers Verdant Produce, which is a regenerative 100 acre farm located near Singleton. Based on permaculture and biodynamic principles the farm features free range eggs, organic fruit and vegetables, sheep and beef cattle.
